Tide Kitchen: Sun-Dried Tomato & Mushroom Boba Fett-uccine

Olive oil
2 garlic cloves
200g semi-sun-dried tomatoes
400g mushrooms
300ml cream
1x brown onion
Fresh basil
Fresh fettuccine
Salt & pepper


  1. Cook the fettuccine according to the packet, or be even more daring and make your own. Drain, toss some olive oil through it and set aside.
  2. Dice your brown onion and garlic. Add to fry pan with some olive oil.
  3. Add the mushrooms and season with some salt and pepper. Fry away until the mushies are cooked.
  4. Add the sundried tomatoes, give it a two-minute stir and then add your cream. Let the sauce boil and simmer.
  5. Tear up some basil and add it to the mix, the sauce is now done.
  6. Stir the sauce through the fettuccine. Serve with torn pieces of bocconcini, as you wish.
